Sodium tripolyphosphate is a white powder crystal, soluble in water, its aqueous solution is alkaline. It is an amorphous water soluble linear polyphosphate.
It is often used in food as a water retaining agent, quality modifier, pH regulator and metal chelator. Sodium tripolyphosphate is also used in petroleum, metallurgy, paper making, water treatment and so on. They are mainly used as synthetic detergent auxiliaries, soap synergists and prevent soap grease precipitation and frost.
